Incrocio

This beer is produced respecting ancient brewing traditions, but with local features.

The beer matures for long time in oak barrels. During this period a mixed fermentation by several yeasts and lactic bacteria occurs. At the end of this long period, we add must of our Incrocio Manzoni grapes, to start a secondary fermentation and to give complexity.

Bottle conditioned, unfiltered and unpastorized.

Madamin

Top fermented OAK AMBER ALE, fermented and matured exclusively in oak vats. Made from a recipe inspired by the Belgian Ales. The name “Madamin” is a piemontese word meaning “young married lady”
Ingredients: barley malt, wheat (unmalted), hops. sugar, top fermenting ale yeast.

“Deep amber ale, vinuous in the nose with fruity flavors of red currant, lactic notes from wild yeasts (brettanomyces) and those coming from using of wooden barrels. pleasant and easy drinkable with lactic notes not too aggressive well balanced by fruity taste of cherry, bitter almond nut and white pulp peaches. La Luna Rossa

Intense amber with ruby reflections, olfactory complexity: fruity aromas (cherry and black cherry), accompanied by thin acetic and lactic acid hints and shades of oxidized malts. In the mouth it is tasty, large, persistent, and ends with a fantastic acidity.
